HUNT'S MINESTRONE
1 cup diced potato 1/2 cup chopped onion 1/2 cup carrot 1 tablespoon oil 1 (14.5 oz) can Hunt's Whole Tomatoes 2 cups chicken broth 1 (8 oz) can Hunt's Tomato Sauce 1/2 cup dried small elbow macaroni 1/2 cup chopped zucchini 1 cup chopped lettuce salt and ground black pepper (to taste) fresh grated Parmesan cheese (optional, to serve)
Brown potato, onion, and carrot in hot oil until lightly golden.
Add and mix tomatoes, broth, sauce and macaroni; bring to a boil, breaking up tomatoes while stirring. Reduce heat. Simmer uncovered 10 minutes.
Add remaining ingredients. Simmer 5 minutes, stirring occasionally.
Sprinkle with cheese before serving, if desired.
