GINGER SHRIMP WITH SNOW PEAS

2 tablespoons peanut oil
1/4 teaspoon sesame oil
3/4 pound medium shrimp, peeled and deveined
1 clove garlic, crushed
1 1/2 cups fresh or frozen snow peas
1 (8 ounce) can sliced water chestnuts
1/2 cup chicken broth
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon cold water
1 tablespoon grated fresh ginger
chow mein noodles or freshly cooked rice (to serve)

Heat the oils in a wok or heavy skillet until hot but not smoking. Add shrimp and stir-fry for 2 minutes. Transfer to plate and set aside.

Add garlic to wok; stir for 15 to 20 seconds.

Add snow peas, water chestnuts, broth and soy sauce; stir-fry for 2 minutes.

Combine the cornstarch and water in small cup; blend until smooth. Add to wok. Return shrimp to wok with ginger and stir until sauce thickens and mixture is heated through.

Serve immediately over chow mein noodles or rice.
