Sherrie Dunn had asked for a recipe for cherry crunch. This isn't the one she described, but it is still good and it calls for oats! (Joy of Cooking)
QUICK CHERRY CRUNCH
Preheat oven to 350 degrees F.
Mix and let stand 15 minutes: 1/2 cup cherry juice 1 1/2 tablespoons quick-cooking tapioca
Melt in a large pan: 1/2 cup butter
Mix with it: 1 to 1 1/2 cups packed brown sugar 1 cup all-purpose flour 1 cup quick-cooking oatmeal 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt
Put half ot his mixture into a 9x9x2 inch baking pan.
Scatter over it: 2 cups drained canned red cherries and the juice and tapioca mixture.
Cover the fruit with the other half of the pastry mixture.
Bake 30 to 35 minutes or until brown.
Serve warm with whipped cream or ice cream.
