EASY QUICHE
1 1/4 cups Bisquick baking mix 1/4 cup margarine or butter, softened 2 tablespoons boiling water 1 (6 ounce) package sliced Canadian-style bacon, chopped 1 cup shredded Swiss cheese (4 ounces) 4 medium green onions, thinly sliced 1 1/2 cups half-and-half 3 eggs 1/2 teaspoon salt 1/4 teaspoon ground red pepper
Heat oven to 400 degrees F. Grease 9-inch pie plate.
Stir baking mix and margarine until mixed. Add boiling water; stir vigorously until soft dough forms. Press in bottom and up side of pie plate, forming edge on rim of pie plate.
Sprinkle bacon, cheese and onions over crust. Beat half-and-half, eggs, salt and red pepper. Pour into crust.
Bake 35 to 40 minutes or until edge is brown and center is set.
SERVING IDEAS: This makes a great brunch, lunch or dinner entree. For brunch, add a fruit platter with apples, pears and grapes and tempting coffee cake.
NOTES: For an easy-on-the-cook brunch, do as much as possible ahead of time. Chop the bacon, shred the cheese and slice the onions. You can even combine the half-and-half mixture. High Altitude (3500-6500 ft): Heat oven to 375 degrees F. Bake about 40 minutes.
