SWEET POTATO MINI-LATKES2 medium sweet potatoes, peeled and shredded (1 pound)
2 medium green onions, finely chopped (2 tablespoons)
1/4 cup all-purpose flour
1/2 tsp salt
1/4 tsp ground black pepper
1 egg, slightly beaten
1 cup sour cream (for serving)
sliced pecans (optional garnish)
Preheat oven to 400 degrees F. Grease cookie sheet.
Mix all ingredients together except sour cream and pecans. Drop sweet potato mixture by teaspoonfuls onto cookie sheet; flatten slightly.
Bake 12 to 15 minutes, turning once, until golden brown.
Top with sour cream. Garnish with pecans.
*Shredded white potatoes, blotted dry with paper towels, can be substituted for the sweet potatoes.
Makes about 30 appetizers
