GINGERED BANANAS3 bananas, peeled and sliced into quarters 1 tablespoon fat-free vegetable spread 1 tablespoon grated fresh ginger 1 tablespoon firmly packed dark brown sugar 1 teaspoon lime juice Lightly spray a large skillet with nonstick cooking spray. Add spread and melt over medium heat. Add ginger and cook, stirring frequently, until it is warmed through. Add bananas and sprinkle with brown sugar. Cook until browned, about 2 minutes. Turn bananas and cook until sauce begins to caramelize, about 2 minutes. Remove from heat and carefully place bananas on a serving platter. Sprinkle lime juice in the skillet and mix with sauce.
