KEY LIME PIE....
4 egg yolks
6 egg whites
1 can sweetened condensed milk
1/2 cup lime juice
3/4 cup sugar
1/2 tsp cream of tarter
Beat egg yolks until lemon colored, blend in condensed milk slowly.
Add lime juice and mix well.
Add cream of tarter to egg whites, beat until foamy.
Continue beating adding sugar, 1 tbsp at a time, until the egg whites peak.
Fold in 6 tbsp of the whipped egg whites into the filling mixture.
Pour into a 9" baked pie shell.
Top with left over egg whites and bake in a slow oven,350 until golden brown.
