JALAPENO PIE SQUARES

1 (4 ounce) can sliced or chopped Jalapeno
1 pound shredded Cheddar cheese
6 beaten eggs

Preheat oven to 350 degrees F.

Drain Jalapenos. Sprinkle them in a well-greased 9-inch square pan. Cover with cheese.

Beat eggs and pour over cheese.

Bake at 350 degrees F for 30 minutes, or until firm.

Cool and cut into 1-inch squares to serve for appetizers at parties. This could also be served at breakfast, or at lunch with a salad.

Yield: 2 dozen
