ORANGE STUFFING FOR DUCK Enough for a 5lb duck
2 cups chopped celery 1 cup boiling water 1/4 cup chopped green pepper (opt) 1/3 cup chopped onion 1/3 to 1/2 cup butter 2 cups oranges, peeled and diced with the juice 2 tsp orange zest 3/4 tsp poultry seasoning Salt and pepper to taste 7 to 8 cups lightly packed soft bread crumbs
1. Simmer celery in boiling water until tender; drain.
2. Saute peppers and onions in butter until tender, but not browned.
3. Combine oranges, grated peel, seasonings and bread crumbs; add cooked vegetables and toss lightly.
Stuff and bake duck immediately. |
