MINTED GRAPEFRUIT AND HONEY MARINADE

1 tablespoon grated grapefruit zest (colored part of the rind)
1 cup fresh grapefruit juice
3 tablespoons vodka, optional
1 tablespoon honey
3 tablespoons chopped fresh mint
2 teaspoon grated fresh ginger
1 teaspoon ground coriander
1 jalapeno pepper, seeded and minced, optional

In a small bowl, whisk together all the ingredients.

Use as a marinade for skinless, boneless chicken breasts or turkey cutlets. Marinate just 1 to 2 hours because the acid in the grapefruit juice will change the texture of the poultry. Remove poultry from marinade and grill or broil until cooked through.

Marinade makes 1 1/2 cups
