GRILLED GARLIC PEPPER CHICKEN1 (2 1/2 to 3-lb.) chicken, skinned, cut up
FOR THE MARINADE:1 cup white wine or chicken broth
2 Tablespoons olive oil or oil
1 Tablespoon chopped fresh cilantro or 1 teaspoon dried cilantro leaves or parsley flakes
1 teaspoon coarsely ground black pepper
1/2 teaspoon salt
6 to 8 garlic cloves, crushed
1 serrano pepper, seeded, chopped
In small bowl, combine all marinade ingredients, blend well. Place chicken in large nonmetal bowl or plastic bag. Pour marinade over chicken. Cover bowl or seal bag; refrigerate. Marinate at least 30 minutes or up to several hours, turning chicken several times.
WHEN READY TO COOK:Heat grill. Lightly oil grill rack. Drain chicken, reserving marinade. Place chicken pieces on gas grill using indirect medium-high heat or charcoal grill 4 to 6 inches from medium-high coals.
In a saucepan, bring reserved marinade to a boil.
Cook chicken for 30 to 40 minutes until chicken is fork tender and juices run clear, brushing with boiled marinade and turning twice during cooking.
