Beef Burgundy
1 lb stewing beef 1 tbsp. oil 1 lb. fresh mushrooms 1 clove garlic crushed 1 or 2 bay leaves 1/2 tsp. thyme 1/2 cup red wine 1 cup beef broth
Brown meat in oil. Add beef broth, wine, garlic, thyme and bay leaf. Add salt and pepper to taste. Simmer for about 2 hours. Thirty minutes before done add sliced mushrooms. To thicken the stew dissolve 1 tbsp. flour in 1/4 cup water. Add to stew stirring constantly. |
