CARAWAY ROASTED BRUSSELS SPROUTS2 pounds Brussels sprouts, trimmed and halved 2/3 cup olive oil 2 tsp. caraway seeds 2 tsp. kosher salt Preheat the oven to 375 degrees F. Toss all the ingredients together in a large mixing bowl. Spread the Brussels sprouts out on a baking sheet large enough to hold them in one layer and place them in the top half of the oven. Roast until the sprouts are fork-tender and nicely browned, 25-30 minutes. Some of the leaves of the sprouts will break off during the roasting process and get dark brown. Mix them with the sprouts before serving - they add a great flavor. Serve hot. Brussels sprouts can be made the day before and re-heated in a 350 degree F oven for 15-20 minutes.
