WHITE CHOCOLATE ORANGE DREAM BARS
FOR THE OAT MIXTURE: 1 cup plus 2 tbsp Crisco butter flavored shortening, divided use 2 cups lightly-packed brown sugar 2 eggs 2 tsp vanilla 2 1/2 cups all-purpose flour 1 tsp baking soda 1/2 tsp ground cinnamon 3 cups quick oats, uncooked FOR THE FILLING MIXTURE: 1 (14 oz) can sweetened condensed milk 1 1/2 cups white chocolate chips 1 tbsp grated orange rind 2/3 cup chopped pecans or almonds
Preheat oven to 350 degrees F. Grease 15x10-inch (37x25 cm) jelly roll pan with shortening.
TO PREPARE THE OAT MIXTURE: Cream 1 cup Crisco, brown sugar, eggs and vanilla in a large mixer bowl until smooth and creamy. Gradually add flour, baking soda and cinnamon, mixing until smooth. Stir in oats. Set aside.
TO PREPARE THE FILLING MIXTURE: Heat sweetened condensed milk, chocolate chips and the remaining 2 tbsp Crisco on low heat, stirring often, just until melted and smooth. Stir in rind and nuts.
TO ASSEMBLE AND BAKE: Press 2/3 of the oat mixture (about 4 cups) into greased pan. Spread filling mixture evenly over crust. Sprinkle remaining oat mixture evenly over filling.
Bake at 350 degrees F for 25-30 minutes, or until golden. Cool, then cut into bars.
