TZATZIKI DIP
2/3 cup peeled and finely diced cucumber 1 cup plain yogurt, stirred until smooth 1 small clove garlic, minced 2 tablespoons chopped mint (about 8 to 10 sprigs) 1 1/2 tablespoons olive oil 1/4 teaspoon salt Pepper to taste
Combine all the ingredients in a mixing bowl and stir well. Cover with plastic wrap and chill until ready to serve.
Serve with toasted pita, carrots, celery, or chicken strips.
