MOCHA EGGNOG

1 cup heavy (whipping) cream
3 tablespoons instant coffee granules
5 cups milk
1/2 cup chocolate syrup, or to taste
4 cups prepared eggnog
2 1/2 teaspoons vanilla extract
1 teaspoon rum extract, or rum, brandy or liqueur to taste

Combine the cream and coffee granules in a small bowl and microwave 1 minute. Stir to make sure coffee has dissolved.

In a large-capacity mixer (or in 2 batches) beat the milk, chocolate syrup, eggnog and coffee mixture to combine. Beat in vanilla and rum extract or liquor if using. Chill and serve.

Makes about 80 ounces, 20 (4-ounce) servings
