LIGHT AS AIR WAFFLES WITH TURKEY BACON
1/4 tsp active dry yeast 2 cups flour 2 tbsp sugar 3/4 tsp salt 1 stick (1/2 cup) unsalted butter, melted 2 cups milk corn oil as needed 2 eggs, separated 14 strips turkey bacon, each piece cut crosswise into 4 pieces maple syrup (for serving)
Whisk yeast, flour, sugar and salt in bowl. Whisk in butter, then milk. Cover with plastic wrap, let stand at room temperature overnight.
TO COOK: Brush the waffle iron with oil and heat it. Preheat oven to 250 degrees F.
Separate eggs and stir the yolks into batter.
Beat the whites until they hold soft peaks. Stir them into the batter.
Pour 1/3 cup batter for each 4 inch square waffle in the heated iron and place 4 bacon pieces on each square.
Bake 7 minutes or until browned. Repeat with remaining batter and bacon. Place waffles on serving platter in 250 degree F oven until all batches are cooked.
Serve with maple syrup.
