Miniature Cheese Cakes

3 pkgs cream cheese -- (8 oz.)
5 eggs
1 c sugar
1 tsp lemon juice
1 tsp vanilla

ICING:
1 pt sour cream
1/2 c sugar
1 tsp vanilla

Beat cheese. Add sugar gradually. Add eggs, one at a time. Add flavoring. Use small muffin pans, line with paper cups. Fill almost to top.

Bake at 300 degrees for 25 minutes. Must rise and form dent. Cool 5 minutes.

Icing: Mix the above ingredients well.

Cover entire top with icing, put a bit of strawberry preserves in center. Place in oven for 5 more minutes.

These freeze very well.
