EGGS OLE
8 eggs 2 tbsp milk 1/2 cup chopped onion 1/2 cup each diced green pepper and green chilies 1/2 cup diced firm tomatoes 1 cup shredded cheddar cheese 1 tbsp butter or margarine 1 tbsp cream cheese GARNISHES (OPTIONAL): chopped parsley chile salsa sour cream
In a large bowl, beat eggs with milk until mixture is light yellow. Add onion, pepper, chilies, tomatoes and cheese.
In a skillet, melt butter over medium heat. Add egg mixture. Scramble to desired firmness.
Stir in cream cheese until just melted. Remove immediately from heat.
Top with chopped parsley, chile salsa and dollops of sour cream, if used.
