FAR EAST FRIED RICE

1/2 cup each cooked chihcken and shrimp, cut in 1/4 inch pieces
1/2 tsp sugar
1 tbsp soy sauce
1 tsp butter or margarine
1 egg slightly beaten
2 tbsp oil
1 clove garlic, minced or pressed
1 small onion, sliced
1 very small dried hot red pepper, seeds removed
2 green onions, thinly sliced
2 cups cold cooked white rice or brown rice

Blend sugar and soy sauce. Set aside.

Heat butter in small skillet. Add egg and cook as for omellette. Remove from heat. Cut in 1/2 inch strips. Set aside.

Heat oil in wok or large skillet.

Add garlic, onion and pepper. Stir fry for 1 minute. Add green onion and stir fry for 1 minute longer.

Add rice, chicken and shrimp. Stir fry for 3 or 4 minutes longer.

Stir in soy sauce mixture and heat. Garnish with egg strips. Serve at once.
