CAJUN CHICKEN WITH GRAPE SAUCE
1 tablespoon Cajun seasoning blend 4 boneless, skinless chicken breast halves (6 to 8 oz. each) 3 tablespoons butter 2 tablespoons lemon juice 8 oz. green and red grapes, halved (about 1 1/2 cups)
Sprinkle Cajun seasoning evenly over both sides of each chicken breast.
In a large skillet over medium-high heat, melt 2 tablespoons butter. Add chicken; cook until browned and juices run clear when pierced with a fork, 5 to 7 minutes on each side. Place chicken aside; cover loosely with aluminum foil to keep warm.
Melt remaining 1 tablespoon butter in skillet; stir in lemon juice and 2 tablespoons water. Heat mixture, scraping any brown bits from bottom of skillet. Add grapes and cook over medium heat until just heated through.
Cut chicken breast into slices and top with grape sauce.
