AUTHENTIC ASIAN HOME-STYLE RICE
2 cups medium grain rice 2 1/2 cups water
Place rice in a wire mesh colander; rinse under cold water until water runs clear, about 1 mm. Place rinsed rice and water in a small (approx 2-1/2 quart) saucepan; place over HIGH heat. Bring to a boil; cook, uncovered, 2-3 minutes until water is reduced by about one-half.
Reduce heat to MEDIUM. Cook, partially covered, about 5 minutes more until water is not visible above rice.
Turn heat to LOW. Simmer, covered, about 5 minutes, until water has completely evaporated.
Turn off burner. Let rice sit on burner, covered, for 5 minutes. Serve.
Leftover rice can be saved to make fried rice.
COOKING TIP: Never stir rice while cooking.
