TANGY POCKET BURGERS
FOR THE VEGETABLE MIXTURE: 1 cup shredded cabbage 1/2 cup shredded carrot 1/4 cup sliced radishes 1 tablespoon minced parsley 1 (8 oz.) carton (1 cup) plain low-fat yogurt Dash of pepper FOR THE BURGERS: 1 lb. lean ground beef 3/4 cup Quaker Oats (quick or old fashioned, uncooked) 1/4 cup finely chopped onion 2 tablespoons minced parsley Dash of pepper TO SERVE: 3 pita loaves, cut in half 6 lettuce leaves 1 large tomato, sliced
TO MAKE THE VEGETABLE MIXTURE: Combine cabbage, carrots, radishes, parsley, 1/2 cup yogurt and pepper; mix well. Chill.
TO MAKE THE BURGERS: Combine beef, oats, remaining 1/2 cup yogurt, onion, parsley and pepper. Shape mixture into six, 1/2-inch thick patties; place on rack of broiler pan about 4 inches from heat.
Broil 3 to 4 minutes on each side or until of desired doneness.
TO SERVE: Place each burger in lettuce-lined pita half; top with tomato slice and 1/4 cup vegetable mixture.
MICROWAVE OVEN DIRECTIONS: Prepare vegetable mixture and hamburger patty as recipe directs. Place patties on microwaveable roast rack in 13x9-inch glass baking dish; cover with wax paper. Microwave at HIGH 6 1/2 to 7 1/2 minutes; turn and rearrange after 3 minutes. Let stand 5 minutes. Proceed as recipe directs.
