FRESH APPLE BARS
1 1/2 cups Nature Valley granola (any flavor), crushed 1 cup Gold Medal all-purpose flour 1/2 cup sugar 1/2 cup margarine or butter, softened 1 egg 1 teaspoon vanilla 1/2 teaspoon baking powder 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger 1 large apple, pared and chopped FOR THE GLAZE: 1/2 cup powdered sugar 1/2 teaspoon grated lemon peel 2 to 3 teaspoons lemon juice.
Heat oven to 375 degrees F. Grease square pan, 8x8x2 inches.
Mix all ingredients except apple and Glaze; reserve 1 cup dough. Spread remaining dough in pan. Arrange apple over dough in pan. Drop reserved dough by rounded teaspoonfuls onto apple; spread slightly.
Bake until golden brown and wooden pick inserted in center comes out clean, 25 to 30 minutes; cool. Drizzle with Glaze. Cut into bars, about 2 x 1 1/4 inches.
TO MAKE THE GLAZE: Beat powdered sugar, lemon peel and lemon juice.
