CONFETTI MUSHROOM AND RICE SIDE DISH
2 tablespoons butter or margarine 1/2 cup diced red bell pepper 3 tablespoons sliced green onions including tops 1 cup uncooked long grain white rice 1/2 teaspoon dried thyme 2 cups chicken broth 1 jars (4.5 oz each) Green Giant Sliced Mushrooms, drained
Melt margarine in medium saucepan. Add bell pepper, onions, and uncooked rice. Saute for 2 to 3 minutes until vegetables become tender and rice begins to brown.
Add thyme, chicken broth, and mushrooms; bring to a boil. Cover; reduce heat and simmer for 20 minutes or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes.
