ALMOND HOLIDAY RICE
1 cup Mahatma Rice (long grain white rice) 1 medium onion, chopped 1 clove garlic, minted 4 tablespoons butter, divided use 1/2 cup chopped almonds, toasted 1 (l oz.) jar chopped pimentos 2 jars (2.5 oz. each) mushrooms, drained and chopped salt and pepper (to taste) 1/2 cup heavy (whipping) cream cayenne pepper (for garnish)
Preheat oven to 350 degrees F
Prepare rice according to package directions. Set aside.
In a medium skillet saute onion and garlic in butter.
Add almonds, pimentos, mushrooms, salt and pepper. Fold in cooked rice. Fold mixture into an oiled 2 quart baking dish. Pour heavy cream over rice mixture.
Bake at 350 degrees F tot about 15 minutes, or until thoroughly heated Sprinkle with cayenne pepper.
