BAKED APPLES A LA ORANGE
4 medium red baking apples 1/2 cup orange juice 2 tablespoons brown sugar 1 teaspoon grated orange peel 1/8 teaspoon ground nutmeg 2 tablespoons chopped walnuts
Heat oven to 375 degrees F.
Wash and core apples; remove strip of peel from around center. Place apples in 8-inch square (1 1/2-quart) baking dish.
In 1-cup measuring cup or small bowl, combine orange juice, brown sugar, orange peel and nutmeg; pour over apples. Cover dish with foil.
Bake at 375 degrees F for 25 minutes. Baste apples with sauce; sprinkle with walnuts. Bake, uncovered, an additional 25 to 30 minutes or until apples are tender.
To serve, spoon sauce over apples.
TO COOK IN A MICROWAVE: Prepare apples as directed above; place in 8-inch square (11/2-quart) microwave-safe dish. Prepare sauce as directed above; pour over apples. Cover dish with microwave-safe plastic wrap. Microwave on HIGH for 6 minutes, rotating dish 1/4 turn every 2 minutes. Baste apples with sauce; sprinkle with walnuts. Microwave an additional 3 to 4 minutes or until apples are tender. To serve, spoon sauce over apples.
