QUICK MOLASSES CUT-OUT COOKIES

1 cup Brer Rabbit Molasses
1/2 cup shortening
2 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons grated lemon or orange rind

Combine molasses and shortening in saucepan. Bring to boil. Cool.

Sift dry ingredients together. Add the rind and mix into cooled molasses mixture. Chill 2 hours.

TO BAKE:
On a floured board roll dough 1/8-inch thick. Cut out stars, Santa, angels, Christmas trees, etc. Place 1/2-inch apart on greased cookie sheet.

Bake in moderately hot oven (375 degrees F) 8-10 minutes.

Makes 48 cookies
