MIXED NUT SQUARES
3/4 cup packed brown sugar 1/3 cup margarine or butter, softened 1 teaspoon vanilla 1 egg yolk 2 cups Bisquick baking mix 1/2 cup light corn syrup 2 tablespoons margarine or butter 1 (6 ounce) package butterscotch chips 1 (12 ounce) can salted mixed nuts
Heat oven to 350 degrees F. Mix brown sugar, 1/3 cup margarine, the vanilla and egg yolk with fork in ungreased rectangular pan, 13x9x2 inches. Stir in baking mix until moistened (mixture will be crumbly). Press evenly in pan.
Bake until light brown, 15 to 20 minutes; cool.
Mix corn syrup, 2 tablespoons margarine and the butterscotch chips in saucepan. Cook over medium heat, stirring occasionally, until butterscotch chips are melted; cool.
Spread butterscotch mixture over baked layer. Sprinkle with nuts; gently press into topping. Refrigerate until topping is firm, at least 2 hours.
Cut into 1 1/2-inch squares. Cover and refrigerate up to 2 weeks, or wrap, label and freeze up to 6 months.
