SHRIMP ELEGANTE
2 tbsp. minced shallots 2 tbsp. butter 1 pound deveined, cleaned shrimp 1/4 pound sliced mushrooms 1 teaspoon salt 1/8 teaspoon ground black pepper 3 tbsp. chili sauce 1 2/3 cups water 1 1/3 cups Minute Rice, uncooked 1 cup sour cream 1 tbsp, flour 1 tbsp, chopped chives (for garnish)
Saute shallots in butter until golden.
Add shrimp and mushrooms; saute and stir until shrimp are pink.
Combine salt, pepper, chili sauce, and water. Add to shrimp mixture. Bring to a boil. Stir in Minute Rice, Cover and simmer 5 minutes.
Combine sour cream and flour. Add to rice mixture; heat gently. Sprinkle with chives.
