GOLDEN YAM BISCUITS

2 cups sifted flour
3 teaspoons baking powder
1 teaspoon salt
4 tablespoons shortening
1/2 cup grated raw Louisiana Golden Yams
3/4 cup milk

Sift flour, baking powder and salt together. Using two knives or pastry blender, cut in shortening until it is the size of small peas. Stir in grated yams. Add milk to make a soft dough, stirring only enough to moisten dry ingredients.

Turn out on a lightly floured board and knead lightly for 30 seconds. Roll or pot out to 1-inch thickness; cut with a cookie cutter or cut in squares with a knife.

Bake on baking sheet in hot oven (450 degrees F) for 10 to 12 minutes. Serve hot.

Makes 1 dozen
