BANANA CAKE TO TAKE

1 egg
2/3 cup vegetable oil
2/3 cup buttermilk
1 1/3 cups mashed very ripe bananas (4 medium)
3/4 cup sugar
1 teaspoon vanilla
1 1/3 cups Gold Medal all-purpose flour
1 cup quick-cooking or old-fashioned oats, uncooked
2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
2/3 cup chopped nuts
2/3 cup raisins
powdered sugar (optional, for garnish)

Heat oven to 350 degrees F. Spray rectangular pan, I 3x9x2 inches, with nonstick cooking spray.

Beat egg, oil, buttermilk, bananas, sugar and vanilla in large bowl. Stir in flour, oats, baking soda, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pan.

Bake 30 to 35 minutes or until toothpick inserted in center comes out clean; cool. Sprinkle with powdered sugar if desired.

Makes 15 to 18 servings
