CHOCOLATE LOVER'S CHEESECAKE
FOR THE CRUST: 1 1/2 cups Kretschmer Wheat Germ, any flavor 1/4 cup firmly-packed brown sugar 3 tablespoons margarine, melted 1 egg white, lightly beaten FOR THE FILLING: 1 (16 ounce) caron low-fat (1 %) cottage cheese 2/3 cup sugar 1/2 cup unsweetened cocoa powder 1 teaspoon vanilla 1/2 cup egg substitute (or use 4 egg whites)
Heat oven to 350 degrees F. Lightly spray 9-inch pie plate with no-stick cooking spray.
TO MAKE THE CRUST: Combine all ingredients for the crust; mix well. Press mixture onto bottom and sides of prepared pie plate.
Bake 8 minutes; remove from oven.
TO MAKE THE FILLING: Place cottage cheese in blender container or food processor; blend until smooth. Add remaining ingredients; blend until combined. Pour into crust.
Bake 40 to 45 minutes or until center is almost set. Cool; cover and refrigerate 3 hours or overnight before serving.
