HOT BEAN SALAD

2 strips bacon or salt pork
1/3 cup chopped onion
3 cups boiled or baked dried beans
1/2 teaspoon mustard
1/4 cup vinegar
1/4 cup water
dash of ground black pepper

Cut bacon or salt pork into half-inch pieces and fry to a light brown.

Add onion and brown lightly.

Add beans, mustard, vinegar and water, and a dash of pepper. Simmer until the beans absorb the liquid.

Double the recipe if you wish to serve hot bean salad as the main dish.
