BARBECUED MEATLOAF

1/4 cup molasses
1/4 cup prepared mustard
1/4 cup vinegar
1 (8 ounce) can tomato sauce
2 eggs
3 cups soft bread
1 medium onion, quartered
8 sprigs parsley
1 tablespoon salt (or to taste)
1/2 teaspoon thyme
3 pounds ground beef

Combine molasses, mustard and vinegar in a small bowl. Add 1/2 cup of this mixture to the tomato sauce and eggs in a large mixing bowl. Beat with Mixmaster Hand Mixer, or Mixmaster Mixer, until well blended.

Tear a slice of fresh bread into pieces and put into Sunbeam Blender. Cover and process at Crumb. Empty bread crumbs into a measuring cup. Repeat process until 3 cups have been made. Put into mixing bowl with tomato mixture.

Place onion and parsley in Blender. Cover and process at Chop. Put into the mixing bowl.

Add salt, thyme and ground beef to mixing bowl. Mix well. Form into a loaf in a shallow baking pan. Brush with part of the remaining molasses mixture.

Bake in a preheated 350 degree F oven 1 1/2 hours, brushing with remaining mixture.

Makes 12 servings
