CRISPY EGGPLANT1/2 cup Hellmann’s or Best Foods Real Mayonnaise
1 tablespoon instant minced onion
1/4 teaspoon salt
1/3 cup fine dry bread crumbs
1/3 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1 medium eggplant (1 lb), cut crosswise in 1/2-inch slices
In small bowl stir together first 3 ingredients.
In shallow dish or on sheet of waxed paper combine next 3 ingredients,
Brush both sides of eggplant with Real Mayonnaise mixture; coat with crumb mixture. Place in shallow roasting pan or on baking sheet.
Bake in 425 degree F oven 15 to 17 minutes or until browned.
Makes 4 to 6 servings
