DE ZWAAN CAFE DUTCH DOUGHNUTS

1 1/2 cups all purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons cooking oil
1 egg, slightly beaten
1/2 teaspoon vanilla
1/2 cup raisins
shortening or cooking oil
sugar or sifted powdered sugar (for dusting)

In a mixing bowl, stir together the all purpose flour, the 1/3 cup sugar, baking powder and salt. Add the milk, oil, egg and vanilla. Stir just till combined. Stir in the raisins.

Drop by tablespoonfuls, 5 or 6 at a time, into deep, hot fat 365 degrees F. Fry for 3 minutes or till done, turning with a slotted spoon after 1 1/2 minutes so the doughnuts will brown evenly. Drain on paper towels.

Roll warm doughnuts in sugar or powdered sugar.

Makes 32 doughnuts
