MISSOURI DRY RUB

2 tablespoons salt
1/4 cup granulated sugar
2 tablespoons freshly ground black pepper
2 tablespoons ground cumin
2 tablespoons chili powder
1/4 cup paprika

Combine all ingredients; blend thoroughly.

Rub about 1 tablespoon on each pork steak or the entire batch on 2 full racks of ribs. Let stand in the refrigerator 2 to 8 hours before cooking.

Yield: 1 cup
