GARLIC-OAT CRACKERS
1 cup rolled oats 1/2 cup water 3/4 cup all purpose or unbleached flour 2 tablespoons wheat germ 1 tablespoon sugar 1 teaspoon garlic salt 1/4 cup margarine or butter
In small bowl, combine rolled oats and water: let stand 5 minutes.
Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, wheat germ, sugar and garlic salt; blend well. Using fork or pastry blender, cut margarine into flour until consistency of coarse meal. Add oat mixture; stir until well blended. If necessary, add water by teaspoonfuls until mixture holds together.
On floured surface, knead dough gently 5 or 6 times. Form into ball; cover with foil. Refrigerate overnight.
WHEN READY TO BAKE: Heat oven to 375 degrees F.
For each cracker, form 1/2 teaspoon of dough into ball; place on ungreased cookie sheet. With palm of hand, flatten each cracker until very thin.
Bake at 375 degrees F for 10 to 14 minutes or until edges brown slightly. Remove from cookie sheets; cool completely.
