DEEP DISH APPLE CAKE
6 sliced apples, peeled 1/2 cup golden raisins grated peel and juice of 1 lemon 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger FOR THE TOPPING: 1/2 cup butter or margarine, softened 9 tablespoons sugar 2 eggs 1 teaspoon vanilla 1 tablespoon warm water 1 cup all-purpose flour 1 teaspoon baking powder 3/4 teaspoon ground nutmeg
Preheat oven to 350 degrees F.
Combine apples, raisins, lemon peel and juice and spices in a 2-quart casserole. Mix well; set aside.
In a large bowl, combine butter and sugar; beat with electric beaters until fluffy; beat in eggs, vanilla and water; seta aside.
Combine flour, baking powder and nutmeg. Add to batter, beating constantly. When batter is fully combined and fluffy, pile on top of apple mixture. Spread evenly.
Bake about 35-45 minutes or until a skewer inserted in the middle comes out clean. Let stand about 1/2 hour before serving warm.
