TOMATO SLICES WITH FETA AND CHOPPED HERBS
Cut California tomatoes in half crosswise and fish out the seeds. Place on a platter and top with crumbled feta cheese. Sprinkle with minced chives and parsley, basil strips, salt, and freshly ground black pepper. Spoon Strong Vinaigrette over all.
STRONG VINAIGRETTE (makes about 1/2 cup)
1 tsp. salt, or to taste 1 heaping tsp. green-peppercorn mustard Scant 1/2 tsp. black pepper 2 Tbsp. balsamic vinegar 3 Tbsp. vegetable oil 2 to 3 Tbsp. olive oil
Whisk all ingredients together.
