APPLE AND POTATO GRATIN
"An adaptation of a popular specialty served at Jack’s Restaurant. This goes well with barbecued poultry."
1 pound small new potatoes, with skins, washed and thinly sliced 2 tart green apples (about 12 ounces), peeled, cored and thinly sliced 1/2 teaspoon leaf thyme, crumbled 1/2 teaspoon leaf rosemary, crumbled 1/8 teaspoon ground black pepper 2 tablespoons butter or margarine
Preheat oven to very hot (475 degrees F). Lightly grease shallow 1-quart baking dish or 9-inch pie plate.
Overlap half the apples and potatoes in prepared dish. Combine thyme and rosemary; sprinkle half over potato mixture. Top with layer of remaining potatoes and apples. Sprinkle with remaining herbs and pepper. Dot with butter. Cover tightly with foil.
Bake in preheated very hot oven (475 degrees F) for 30 minutes. Remove foil. Bake 10 minutes more or until potatoes are browned around edges.
