BAKED POTATOES WITH CHEF’S CHEESE SAUCE
"When potatoes are done, roll gently under hand. Immediately crisscross tops with fork tines; press ends, pushing up to fluff."
5 or 6 baking potatoes 1/2 cup dairy sour cream 4 tablespoons butter or margarine, softened 1 cup shredded sharp process American cheese 2 tablespoons chopped green onion
Scrub potatoes. For crunchy skins, bake as is; for soft skins, rub with shortening.
Bake in hot oven (425 degrees F) 40 to 60 minutes, depending on size of potatoes.
Serve with Chef’s Cheese Sauce.
TO PREPARE THE CHEF'S CHEESE SAUCE: Have sour cream, butter or margarine, cheese, and onion at room temperature; with electric mixer, beat together till light and fluffy.
