HERBED WHITE BEAN SALAD
1 (20 ounce) can white kidney beans (cannellini), drained 1/3 cup sliced green onions with tops 3 tablespoons oil, preferably olive oil 2 tablespoons white wine vinegar 2 tablespoons chopped fresh parsley 1 tablespoon chopped fresh mint (or 1 teaspoon dried) 1/2 teaspoon salt Dash of pepper
In bowl mix well all ingredients. Cover and chill at least 1 hour.
