PORK CHOP SPAGHETTI
4 pork loin chops 2 teaspoons salt 1 small onion, minced 1/2 green bell pepper, chopped 1 clove garlic, minced 1 (16 ounce) can tomatoes 1 tablespoon brown sugar 1 tablespoon vinegar 1/2 teaspoon seasoned salt 1/4 teaspoon ground black pepper 4 ounces thin spaghetti, broken
Trim some fat from pork chops and cook trimmings in large skillet or Dutch oven until bottom of pan has about 1/8 inch of drippings; brown chops on both sides in drippings.
Sprinkle chops with 1/2 teaspoon of the salt. Add onion, green pepper, and garlic; cook over moderate heat about 5 minutes, stirring occasionally.
Mix in the tomatoes, brown sugar, vinegar, seasoned salt, remainder of the regular salt, and pepper. Cover and simmer about 45 minutes.
Add broken spaghetti. Cover and simmer 35 minutes longer or until the spaghetti is tender.
