TORTILLA SALAD SHELLS

4 (8-inch) flour tortillas
Oil for frying

Heat 2 to 3 inches oil in deep fryer heavy saucepan to 375 degrees F.

Place on€ tortilla on top of hot oil. Center a metal soup ladle over tortilla. Quickly and gently push tortilla into hot oil. Fry 1 to 2 1/2 minutes or until golden brown and crisp, rotating tortilla to brown all sides.

Remove from oil, tipping tortilla shell to drain off oil. Place fried tortilla shell on paper towels. Pierce any bubbles that have filled with oil; drain. Carefully remove ladle. Cool completely. Repeat with 3 remaining tortillas.

TIP:
A small food can, 2 1/2-inches in diameter with ends and label removed, held with tongs can be used in place of a metal soup ladle.

Makes 4 servings (1 tortilla shell each)
