HARVEY WALLBANGER’S SWEET AND SOUR PORK

2 pounds boneless pork, cut in 1-inch cubes
2 tablespoons salad oil
1 (6 ounce) can frozen orange juice concentrate, thawed
1/4 cup rice vinegar
1/4 cup soy sauce
1/4 cup brown sugar
1 tablespoon instant chicken bouillon granules
2 tablespoons cornstarch
1 teaspoon nutmeg
1 teaspoon ginger
1/4 cup Galliano
1 green bell pepper, cut in strips
1/2 Bermuda onion, sliced and separated into rings
1 orange, peeled and sectioned
1/4 cup halved maraschino cherries
Hot cooked rice (for serving)

In large skillet, brown pork cubes on all sides until golden in the salad oil.

Stir in the orange juice concentrate, vinegar, soy sauce, sugar, and bouillon granules. Bring to boiling; reduce heat and simmer 1 hour.

Combine cornstarch, nutmeg, and ginger. Stir in the Galliano until mixture is smooth. Stir mixture into pork in skillet. Cook and stir still thickened and bubbly.

Stir in green pepper, onion rings, orange sections, and cherries. Cook, uncovered, 5 to 10 minutes.

Serve with hot fluffy rice.
