HISTULAS (LITTLE PECAN DOUGHNUTS)
1 large orange 2 tablespoons grated orange rind 1/2 cup currants 1/2 cup chopped pecans 2 cups flour, sifted 1/2 cup sugar 1/2 teaspoon baking soda 1/4 teaspoon salt 2 egg yolks, beaten 1/2 cup sour cream Oil for frying Additional sugar
Squeeze 2 tablespoons of juice from the orange. Pour this over the currants and let them soak. Set aside.
In a large bowl, stir together the sugar baking soda and salt and mix in the egg yolks and sour cream. Then stir in the orange rind, currants and juice, nuts and flour, mixing well.
With floured hands, gently form the dough into small balls no larger than a quarter. Roll each ball in flour to coat lightly.
Drop a few at a time into hot oil (325 degrees F) that is deep enough for the doughnuts to sink. Fry until golden, drain on paper towels, and while still hot, roll in sugar. Serve warm.
