GREEN TEA POACHED FISH

4 cups Celestial Seasonings Antioxidant Green Tea
2 teaspoons grated ginger
2 teaspoons minced garlic
2 teaspoons minced white onion
1 1/2 to 2 pounds fish (4 small steaks or 2 large ones) Use any firm fish; salmon and halibut both work well.
Salt and pepper

To make green tea, pour hot but not boiling water over tea bags and steep for 5 minutes. Use one tea bag for every 8 ounces (1 cup) of hot water.

In a deep skillet, simmer green tea, ginger, onion and garlic for 10 minutes.

Salt and pepper fish steaks and place them gently into the poaching liquid. Adjust heat to a gentle simmer, and cook 8-10 minutes until fish is slightly translucent. Remove fish and serve.
