BASIC BAKED FISH - TENDER AND MOIST
1/2 pound dressed or pan-dressed fish (OR 1/3 pound fish fillets), per person About 1/4 cup melted margarine, butter or oil 1/2 teaspoon salt 1/4 teaspoon lemon and pepper seasoning 1/4 teaspoon paprika
Wash and dry fish thoroughly. Place fish in single layer in foil-lined shallow baking pan. Mix rest of ingredients together and pour over fish in pan.
Bake at 350 degrees F until fish flakes easily when tested with a fork; 20 to 25 minutes for fish fillets; 25 to 30 minutes for pan-dressed fish; 45 to 60 minutes for stuffed dressed fish. Be careful not to overcook.
NOTES: - Thinly sliced onion, toasted almonds, mushroom caps, etc., may be added when fish is almost done. Pour with pan drippings over fish when serving.
- For that “extra special” touch, a sauce, such as Creole, egg, mushroom, cheese, etc., can be prepared and poured over fish before serving.
- When stuffing fish, allow about 1/2 cup stuffing per pound of fish.
